    摘要:   龍眼產業是臺灣早期重要的經濟產業之一,近年來面臨WTO及農業精緻化等壓力下,逐漸勢微,加上農村老年化,使得烘焙技術逐漸產生斷層現象。因此,本研究以台南縣東山鄉南溪村龍眼乾產業的「龍眼烘焙竈」為主要研究對象,探討探討南溪村龍眼乾產業的發展歷程,分析龍眼烘焙竈的構成與類型,探討烘焙寮分佈與烘焙效益,發掘地方產業所承載之地方知識,以做為學校本土教育之教學教材參考,落實本土教育從生活中實現的目標。   透過田野調查、文獻資料蒐集及影像記錄,從南溪村龍眼乾產業的發展歷程,了解南溪村受地理、氣候條件限制,以及為達到穩定產銷平衡之目的,故得發展出高技術性的龍眼乾產業:包括烘焙竈的建造以及龍眼乾烘焙。烘焙竈之構成具有竈口、煙道及烘焙床三個部份並各司其職,從中發展出不同時期、不同類型之烘焙竈,並配合南溪村之地理位置、地形條件建造。南溪村的龍眼乾產業文化中,同時也充分表現南溪村民對宗教信仰的依賴,及充滿智慧、巧思與自然的烘培文化與生活。
      Longan industry was one of the most important industries in early Taiwan economy. However, it has dwindled so drastically that there is already a breach in the baking and drying techniques of longan industry, due to Taiwan's WTO accession and agricultural refinement process, in addition to aging work force in farming villages. It is against this background that this research focuses on the ” Longan kiln” for baking and drying longan produced in Nanhsi Village, Dungshan Township, Tainan Country. This research explores the origin, development process, the formulation and structure of the kiln, the huts locations and their efficiency evaluation. Efforts are being made to find out how much local knowledge is borne in local industries and how local educational materials can benefit from these local ingredients, and in the end, how the goals of local education can be realized in real life.   By means of field study, documents gathering and visual records, it is understood that the development history of dried longan industry in Nanhsi Village is so much restrained by its geographical and climate factors. It is further noted that the application of high tech in the construction of the kiln and baking and drying process actually result from the need of balancing production and sale. Every kiln has three major components: an entrance, smoke tunnel and baking platform. Variations of the three represent kilns of different generation out of the need to cope with the geographical location and topographical nature of Nanhsi Village. Above all, from the longan industrial culture in Nanhsi Village can we appreciate much more about local people's reliance on religious belief and, more specifically, their baking culture and life of wisdom, wittiness and orientation towards nature.
