Abstract:	金門以觀光立縣，許多觀光客到金門旅遊除了欣賞閩南建築、戰地遺跡，也品嘗在地飲食文化。　　蔬食起源於中國古代儒家思想及佛家慈悲不殺生的精神，目前全世界愈來愈多的人基於身體健康、環保減碳、保護動物，加入蔬食行列。本研究以金門文創融入蔬食料理的推廣做為研究標的，以瞭解蔬食料理在金門地區發展的背景、現況及未來展望。運用質性分析法和半結構式訪談法，由文獻資料研擬訪談大綱，訪談金門地區目前消費者常去之蔬食餐飲業者、瞭解其經營理念、產品的特色，消費者族群、產品價格、地點、行銷及經營模式。　　蔬食有益健康，吃肉過量導致慢性病並危及地球生態，已成人類社會共識，聯合國世衛組織也呼籲世人棄肉茹素。2019年12月新冠疫情爆發，是大自然對人類破壞生態的反撲，災難頻傳的今天，蔬食是值得提倡的健康生活方式。將文創融入蔬食料理的推廣，也是金門縣發展觀光及低碳永續島嶼非常有意義的工作。　　Kinmen is a county based on tourism. Tourists who travel to Kinmen not only appreciate the southern Fujian architecture and battlefield relics, but also taste the local food culture.　　Vegetable food originated from ancient Chinese Confucianism and Buddhism's compassionate and non-killing spirit. Nowadays, more and more people are treated with alcohol to be healthy, environmentally friendly, and protect animals. The promotion of food cuisine is the subject of research to understand the background, current situation and future prospects of the development of vegetable cuisine in Kinmen.　　Using qualitative analysis and semi-structured interview methods, the interview outline is drawn from the literature, interviewing the vegetable and catering industry of the existing consumers in Kinmen, and understanding its business philosophy, product characteristics, consumers, product prices, locations, and sales. Operation and business model. Vegetable food is good for health, and eating meat endangers diseases at the end of the earth. It has become human social consciousness, and the ecological environment organization also warms the world to abandon meat. The outbreak of the new crown epidemic in December 2019 was a reaction to the destruction of the ecology by nature and humans. Today, as the disaster is spreading, vegetable food is a healthy diet that supports it. The promotion of cultural and creative remittance vegetable dishes is a very important work to develop the landscape of Kinmen County and capture the never-ending work.
